Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Prepare the cauliflower: Wash and thoroughly dry the large head of cauliflower. Carefully remove any outer leaves. Place the cauliflower on a cutting board, stem side down. Using a large, sharp knife, slice the cauliflower into 3/4 to 1-inch thick "steaks" from the center. You should get 3-4 good steaks. Don't worry if some florets break off; you can roast them alongside the steaks.
Arrange the cauliflower steaks (and any loose florets) in a single layer on the prepared baking sheet.
Prepare the seasoning oil: In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.
Season the cauliflower: Using a pastry brush, generously brush both sides of each cauliflower steak with the seasoned olive oil mixture.
First bake: Bake for 15-20 minutes in the preheated oven, flipping the steaks halfway through, until the cauliflower starts to soften and turn lightly golden at the edges.
Add cheese: Remove the baking sheet from the oven. Evenly sprinkle the shredded sharp cheddar cheese over each cauliflower steak, then sprinkle with the grated Parmesan cheese.
Second bake: Return the baking sheet to the oven and bake for another 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden brown, and the cauliflower is tender when pierced with a fork.
Serve: Carefully remove from the oven. If desired, garnish with fresh chopped parsley before serving. These cheesy cauliflower steaks are best served immediately.
Notes
For a spicier kick, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix. You can experiment with different cheese blends like Monterey Jack or a Mexican cheese blend. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results to maintain crispiness.
