Whip up a creamy, garlicky, and zesty vegan Caesar dressing in just 5 minutes! Made with hummus, it's dairy-free, gluten-free, and delicious on any salad.
1tspcaper brine(from a jar of capers), or 1/2 tsp finely minced capers
2-4tbspcold waterto thin to desired consistency
¼tspblack pepperfreshly ground
Pinchsea saltto taste, optional
Instructions
Combine all ingredients (hummus, lemon juice, garlic, nutritional yeast, olive oil, Dijon mustard, caper brine, 2 tablespoons of cold water, black pepper, and optional salt) into a blender or small food processor.
Blend on high speed until the dressing is completely smooth and creamy. If the dressing is too thick, add the remaining 2 tablespoons of cold water, one tablespoon at a time, until you reach your desired consistency.
Taste and adjust seasoning as needed. You may want more lemon juice for tang, more garlic for pungency, or more salt/pepper.
Pour into a serving bowl or an airtight container. Serve immediately or chill until ready to use.
Notes
This dressing is fantastic on traditional Caesar salads, but also great with roasted vegetables, as a dip for fresh veggies, or spread on a sandwich. For an extra kick, add a pinch of red pepper flakes.Store leftover dressing in an airtight container in the refrigerator for up to 5-7 days.
